Ingredients
- 1 cup grated zucchini (squeeze out excess moisture)
- 2 ripe bananas, mashed
- 2 eggs
- 1/3 cup honey or maple syrup
- 1/4 cup Greek yogurt or coconut oil
- 1 tsp vanilla extract
- 1 3/4 cups whole wheat or all-purpose flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup chopped walnuts or dark chocolate chips (optional)
Instructions
1. Preheat oven to 350°F (175°C) and grease a loaf pan.
2. In a bowl, mix mashed bananas, eggs, honey, yogurt, and vanilla.
3. In another bowl, whisk together flour, baking soda, cinnamon, and salt.
4. Stir dry ingredients into the wet mixture until just combined.
5. Fold in grated zucchini and optional walnuts or chocolate chips.
6. Pour batter into the loaf pan and smooth the top.
7. Bake for 50-55 minutes, or until a toothpick inserted comes out clean.
8. Let cool before slicing.
