Description

Zucchini bread is a moist, flavorful quick bread made with fresh zucchini, perfect for breakfast or a snack.


Ingredients

  •  2 cups grated zucchini  
  •  3 cups all-purpose flour  
  •  1 teaspoon baking soda  
  •  1/2 teaspoon baking powder  
  •  1 teaspoon salt  
  •  1 teaspoon cinnamon  
  •  1/2 teaspoon nutmeg  
  •  1 cup granulated sugar  
  •  1/2 cup brown sugar  
  •  3 large eggs  
  •  1 cup vegetable oil  
  •  2 teaspoons vanilla extract  
  •  1/2 cup chopped walnuts (optional)  
  •  1/2 cup raisins (optional)

Instructions

1. Preheat oven to 350°F (175°C) and grease a loaf pan.  

2. In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.  

3. In another bowl, mix sugar, brown sugar, eggs, oil, and vanilla until well combined.  

4. Stir in grated zucchini.  

5. Gradually add the dry ingredients to the wet mixture and stir until just combined.  

6. Fold in walnuts and raisins if using.  

7. Pour batter into the loaf pan and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.  

8. Let cool before slicing and serving.  

Notes

 You can substitute half of the flour with whole wheat flour for a healthier version.  

 Add chocolate chips for a sweeter variation.  

 Store in an airtight container for up to 4 days or freeze for longer storage.
