For the Marinade:

  • 4 cloves garlic, minced
  • 1 jalapeño, seeded and minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  • Prepare the Marinade
    In a medium bowl, combine the chopped cilantro, olive oil, soy sauce, orange juice, lime juice, minced garlic, minced jalapeño, ground cumin, chili powder, dried oregano, kosher salt, and black pepper. Whisk until well blended.

  • Marinate the Steak
    Place the flank or skirt steak in a large resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably up to 8 hours, to allow the flavors to penetrate the meat.

  • Preheat the Grill
    About 30 minutes before grilling, remove the steak from the refrigerator to bring it to room temperature. Preheat the grill to medium-high heat.

  • Grill the Steak
    Remove the steak from the marinade and pat it dry with paper towels to promote even browning. Place the steak on the preheated grill and cook for approximately 5-7 minutes per side, depending on thickness, until it reaches your desired level of doneness.

  • Rest and Slice the Steak
    Once cooked, transfer the steak to a cutting board and let it rest for 5 minutes to allow the juices to redistribute. Slice the steak thinly against the grain to ensure maximum tenderness.
