2 eggs
1 cup Greek yogurt
1 garlic clove (minced)
1 tbsp butter
1 tsp olive oil
1/2 tsp red pepper flakes (Aleppo or chili flakes)
1 tbsp vinegar (for poaching)
Salt to taste
Fresh dill or parsley (for garnish)
Toasted bread (for serving)
Instructions
1. In a bowl, mix Greek yogurt with minced garlic and salt. Set aside.
2. Bring a pot of water to a gentle simmer, add vinegar, and poach eggs for 3-4 minutes.
3. Melt butter and olive oil in a small pan, add red pepper flakes, and cook until fragrant.
4. Spread the yogurt onto a plate, place poached eggs on top, and drizzle with the spicy butter.
5. Garnish with fresh dill or parsley and serve with toasted bread.
Notes
Use thick Greek yogurt for a creamy texture.
Ensure the yogurt is at room temperature to prevent curdling.
Adjust spice levels by adding more or less red pepper flakes.
Serve with crusty bread to soak up the sauce.
