Ingredients
- 3 large eggs
- ¼ cup milk
- 1 cup fresh spinach, chopped
- ¼ cup feta cheese, crumbled
- ¼ cup diced onions
- ¼ cup diced tomatoes
- 1 tbsp olive oil or butter
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp garlic powder
Instructions
1. In a bowl, whisk eggs, milk, salt, pepper, and garlic powder until well combined.
2. Heat olive oil or butter in a non-stick pan over medium heat.
3. Add onions and sauté until soft, about 2 minutes.
4. Stir in spinach and cook until wilted, about 1 minute.
5. Pour the egg mixture over the spinach and cook undisturbed for 1-2 minutes.
6. Sprinkle feta cheese and diced tomatoes on top.
7. Gently fold the omelette in half and cook for another minute until set.
8. Serve warm and enjoy!
Notes
Use baby spinach for a milder flavor.
Add mushrooms, bell peppers, or avocados for extra texture.
Can be served with whole wheat toast or a side salad.
