Omelette Bites are fluffy, protein-packed mini omelets, perfect for breakfast or snacks. Easy to customize with various fillings!
Ingredients
- 6 large eggs
- ¼ cup milk
- ½ cup shredded cheese (cheddar, mozzarella, or your choice)
- ½ cup diced bell peppers
- ¼ cup chopped onions
- ½ cup cooked bacon or ham (optional)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp garlic powder
- ¼ tsp paprika
- Cooking spray or butter
Instructions
1. Preheat oven to 375°F (190°C) and grease a muffin tin with cooking spray.
2. In a bowl, whisk together eggs, milk, salt, pepper, garlic powder, and paprika.
3. Evenly distribute cheese, bell peppers, onions, and cooked bacon/ham into the muffin tin cups.
4. Pour the egg mixture into each cup, filling about ¾ full.
5. Bake for 15-18 minutes or until the eggs are set and slightly golden on top.
6. Let cool for a few minutes before removing from the muffin tin.
7. Serve warm or store in an airtight container in the refrigerator for up to 4 days.
Notes
Use any mix-ins like spinach, mushrooms, or tomatoes for variety.
Reheat in the microwave for 30 seconds before serving.
Can be frozen for up to 2 months.
