Ingredients
- 3 ripe bananas, mashed
- 2 eggs
- 1/3 cup olive oil or coconut oil
- 1/4 cup honey or maple syrup
- 1/4 cup Greek yogurt (optional for extra moisture)
- 1 tsp vanilla extract
- 1 3/4 cups whole wheat or all-purpose flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup chocolate chips or walnuts (optional)
Instructions
1. Preheat oven to 350°F (175°C) and grease a loaf pan.
2. In a bowl, whisk together mashed bananas, eggs, oil, honey, yogurt, and vanilla.
3. In another bowl, mix flour, baking soda, cinnamon, and salt.
4. Gradually combine dry ingredients with wet ingredients, stirring until just mixed.
5. Fold in chocolate chips or walnuts if using.
6. Pour batter into the pan and bake for 50-55 minutes, or until a toothpick comes out clean.
7. Let cool before slicing.
Notes
Use extra ripe bananas for natural sweetness.
Substitute oil with unsweetened applesauce for a lower-fat option.
Store in an airtight container for up to 4 days or freeze for longer storage.
