Description

Transform simple green beans into a delicious side dish with a crispy Parmesan crust in under 30 minutes.


Ingredients

  • 1 pound fresh green beans, trimmed
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup grated Parmesan cheese (preferably Parmigiano-Reggiano)
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat your oven to 425°F (220°C). Wash and trim the green beans, drying them well.
  2. In a large bowl, toss the green beans with olive oil, garlic powder, salt, and pepper until evenly coated.
  3. Spread the green beans in a single layer on a baking sheet lined with parchment paper.
  4. Roast for 12 minutes, shaking the pan halfway through.
  5. Remove from oven, sprinkle Parmesan over, and roast for an additional 3-5 minutes.
  6. Serve immediately for best texture.

Notes

For a dairy-free option, use vegan cheese or nutritional yeast. Store leftovers in an airtight container for up to 3 days.
