Ingredients
- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup chocolate chips
- 1/2 teaspoon peppermint extract
- Crushed peppermint candies (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large bowl, melt the butter. Once melted, mix in the sugar until well combined.
- Add the eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract and peppermint extract.
- In another bowl, combine the flour, cocoa powder, salt, and baking powder. Gradually incorporate this dry mixture into the wet ingredients, stirring until just mixed together.
- Gently fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.
- Pour the batter into the prepared baking pan and spread it evenly to create a smooth top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Allow the brownies to cool completely before topping them with crushed peppermint candies. Cut into squares and serve.
Notes
For an extra cocoa boost, sift in some additional cocoa powder on top of the batter before baking. Use fresh peppermint extract for the best flavor intensity.
