A delightful no-bake dessert that layers the rich flavors of traditional pecan pie in a creamy lasagna form.
Ingredients
- 1 cup brown sugar
- 1 cup pecans, chopped (or walnuts for a different twist)
- 2 cups whipped cream
- 1 package (8 oz) cream cheese, softened
- 1 cup vanilla wafer cookies, crushed
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/4 cup milk (or almond milk for a dairy-free option)
Instructions
- In a medium bowl, combine the crushed vanilla wafers and melted butter. Press this mixture into the bottom of a 9×13 inch dish to form a solid crust.
- In a separate bowl, beat the softened cream cheese until smooth. Gradually add the brown sugar, milk, and vanilla extract, mixing until well incorporated.
- Gently fold in the whipped cream until combined to create your creamy filling.
- Spread half of this mixture evenly over the crust.
- Sprinkle half of the chopped pecans over the cream layer.
- Repeat layers with the remaining creamy mixture and then the rest of the pecans.
- Refrigerate for at least 240 minutes before serving. When ready, slice and enjoy.
Notes
Garnish each slice with whipped cream or caramel sauce. This dessert pairs well with vanilla ice cream or coffee.
