Ingredients

  • 1 pound chicken breasts, diced
  • 3 garlic cloves, finely chopped
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 12 oz penne or rotini noodles
  • 4 cups chicken stock
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • Fresh basil leaves, chopped (optional for topping)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced chicken, chopped garlic, and dried Italian herbs. Season with salt and pepper. Cook for 5 to 7 minutes until chicken is no longer pink.
  2. Add marinara sauce and chosen pasta to the pot. Pour in chicken stock and stir well. Bring to a bubble, then reduce heat to low.
  3. Cover the pot and simmer for 12 to 15 minutes, stirring occasionally until noodles are tender and most liquid is evaporated.
  4. Turn off the stove and mix in mozzarella and Parmesan cheeses until melted and creamy.
  5. Serve hot, topped with chopped basil leaves.

Notes

Use high-quality marinara sauce for best flavor; consider adding sautéed spinach or mushrooms for complexity. Freshly grated Parmesan enhances the dish.
