A comforting and quick meal that combines tender chicken, al dente pasta, and creamy cheeses, all made in one pot.
Ingredients
- 1 pound chicken breasts, diced
- 3 garlic cloves, finely chopped
- 2 tablespoons olive oil
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 cup marinara sauce
- 12 oz penne or rotini noodles
- 4 cups chicken stock
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
- Fresh basil leaves, chopped (optional for topping)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced chicken, chopped garlic, and dried Italian herbs. Season with salt and pepper. Cook for 5 to 7 minutes until chicken is no longer pink.
- Add marinara sauce and chosen pasta to the pot. Pour in chicken stock and stir well. Bring to a bubble, then reduce heat to low.
- Cover the pot and simmer for 12 to 15 minutes, stirring occasionally until noodles are tender and most liquid is evaporated.
- Turn off the stove and mix in mozzarella and Parmesan cheeses until melted and creamy.
- Serve hot, topped with chopped basil leaves.
Notes
Use high-quality marinara sauce for best flavor; consider adding sautéed spinach or mushrooms for complexity. Freshly grated Parmesan enhances the dish.
