Ingredients
- 1 cup graham cracker crumbs
- 2 tablespoons sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- Colorful sprinkles for topping
Instructions
- Preheat your oven to 325°F (163°C). In a mixing bowl, combine graham cracker crumbs, 2 tablespoons sugar, and melted butter. Press mixture into the bottom of a greased muffin tin.
- In a large bowl, beat softened cream cheese with 1/2 cup sugar until smooth. Add vanilla and mix well. Beat in eggs one at a time.
- Spoon cheesecake filling over the crust in the muffin tin. Bake for 18-22 minutes until edges are set.
- Let cool to room temperature, then refrigerate for at least 2 hours. Before serving, top with colorful sprinkles.
