Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (red or green)
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • Juice of half a lemon


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground chicken and cook for 6-8 minutes until browned, breaking apart with a spoon.
  3. Add chopped onion and minced garlic, sauté until the onion is translucent (2-3 minutes).
  4. Stir in chopped bell pepper, oregano, smoked paprika, cumin, salt, and pepper; cook for another 3-4 minutes.
  5. Add cherry tomatoes and Kalamata olives, mixing well to create a sauce over about 5 minutes.
  6. Sprinkle crumbled feta cheese over the mixture and let melt slightly.
  7. Remove from heat and stir in fresh parsley and lemon juice.
  8. Taste and adjust seasoning if necessary before serving warm.

Notes

For added flavor, consider marinating the ground chicken in spices and lemon juice before cooking. Customize with zucchini or swap feta for goat cheese if desired.
