Restaurant omelettes are fluffy, savory, and packed with fresh ingredients, perfect for a breakfast or brunch!


Ingredients

  • 3 large eggs
  • 1 tablespoon butter
  • 2 tablespoons milk (optional for extra fluff)
  • Salt and pepper to taste
  • Fresh herbs (parsley, chives, or cilantro)
  • Cheese (cheddar, mozzarella, or feta)
  • Fillings of your choice: mushrooms, onions, bell peppers, spinach, ham, bacon, etc.

Instructions

  • Crack the eggs into a bowl and beat them well with a fork or whisk. Add the milk for fluffiness            (optional).
  • Heat a non-stick skillet over medium-high heat and add the butter. Let it melt and bubble, but             not brown.
  • Pour the beaten eggs into the pan. Tilt the pan to

  • Once the eggs start to set, gently push the edges toward the center with a spatula, allowing the       uncooked eggs to flow to the edges.
  • When the top is mostly set, sprinkle your fillings (cheese, veggies, etc.) on one half of the                 omelet.
  • Fold the other half over the fillings and cook for an additional 1-2 minutes.
  • Slide the omelet onto a plate, garnish with herbs, and serve hot.

Notes

  • For extra fluffiness, whisk the eggs vigorously, incorporating air.
  • Add fillings only when the omelet is almost set so they don’t make the omelet soggy.
