Description

A comforting one-pot dish combining seasoned ground turkey and fluffy potatoes, perfect for quick weeknight dinners or meal prepping.


Ingredients

  • 1 lb ground turkey
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh herbs (optional)


Instructions

  1. Prepare your ingredients by chopping the onion, garlic, and potatoes.
  2. In a large skillet, heat 1 tsp olive oil over medium heat and sauté the chopped onion and minced garlic until the onion is translucent (about 3-4 minutes).
  3. Add the ground turkey to the skillet and cook for 5-7 minutes until no longer pink.
  4. Stir in 1 tsp paprika and season with salt and pepper, then add diced potatoes and mix well.
  5. Cover the skillet and reduce the heat to low, cooking for about 20-25 minutes or until potatoes are tender.
  6. Once done, taste and adjust seasonings as needed, garnish with fresh herbs if desired, and serve hot.

Notes

Let the dish rest for a few minutes before serving for better flavor meld. Store leftovers in an airtight container in the refrigerator for up to 3 days.
