- 8 ounces cream cheese, softened
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 8 ounces melted chocolate (dark or milk)
- Festive sugar or additional spices for garnish (optional)
Instructions
- In a large mixing bowl, combine crushed gingerbread cookies and softened cream cheese. Add ground ginger, ground cinnamon, and ground nutmeg. Mix until a dough-like consistency forms.
- Scoop about one tablespoon of the mixture and roll into smooth balls. Place on a parchment-lined baking sheet and refrigerate for at least 30 minutes.
- In a microwave-safe bowl, melt chocolate in 30-second intervals until smooth.
- Dip each truffle in melted chocolate, allowing excess to drip off. Place back on the parchment and garnish if desired.
- Chill in the refrigerator for at least one hour to set. Store in an airtight container.
Notes
