Ingredients

  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • ½ cup molasses
  • ½ cup milk
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. Sift together the flour, baking powder, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. Beat the butter and brown sugar until fluffy, about 3–4 minutes.
  4. Add eggs one at a time, then mix in molasses and vanilla.
  5. Gradually combine the wet and dry ingredients, alternating with the milk.
  6. Divide the batter among cupcake cups, filling each two-thirds full.
  7. Bake for 18–22 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 5–10 minutes, then transfer to a wire rack to cool completely.
