A delightful twist on classic meatloaf using lean ground chicken, garlic, and Parmesan cheese for a flavorful and healthier option.


Ingredients

  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tbsp soy sauce (low-sodium recommended)
  • 1 tsp salt
  • 1 tsp black pepper


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Sauté diced onions in a skillet over medium heat until soft, about 5 minutes.
  3. In a large bowl, combine the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until well mixed.
  4. Shape the mixture into a loaf form inside the greased baking dish.
  5. Sprinkle the remaining Parmesan cheese on top. If you like, add paprika or Italian seasoning for an additional flavor kick.
  6. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C). Allow the meatloaf to rest for about 10 minutes before slicing to facilitate clean cuts.
