A tender beef tenderloin, slathered in rich garlic herb butter and roasted to perfection.
Ingredients
- 1 beef tenderloin (about 2-3 pounds)
- 4 tablespoons unsalted butter, softened
- 4 cloves garlic, minced
- 2 tablespoons fresh herbs (such as rosemary, thyme, parsley), chopped
- Salt and pepper to taste
- Olive oil for roasting
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, combine the softened butter, minced garlic, chopped herbs, salt, and pepper.
- Rub the garlic herb butter all over the beef tenderloin.
- Heat a large oven-safe skillet over medium-high heat, add a drizzle of olive oil.
- Sear the beef on all sides until browned, about 3-4 minutes per side.
- Transfer the skillet to the preheated oven and roast for 20-25 minutes or until the internal temperature reaches 135°F (57°C) for medium-rare.
- Let the roast rest for 10 minutes before slicing and serving.
Notes
Use fresh herbs for best flavor and let the beef come to room temperature before cooking.
