Ingredients
- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 8 oz mushrooms, sliced
- 3 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the salmon fillets with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add the salmon, skin side down, and sear for 4-5 minutes per side until golden and cooked through. Remove the salmon and set it aside.
- Reduce the heat to medium. Add butter to the skillet. Once melted, add minced garlic and sauté for about 30 seconds until fragrant.
- Add sliced mushrooms to the skillet. Cook for 4-5 minutes until they soften and release moisture.
- Stir in fresh spinach, cooking just until wilted—this should take about 2 minutes.
- Pour in the heavy cream, add grated Parmesan cheese, and stir in optional red pepper flakes. Allow the mixture to simmer for 3-4 minutes until it thickens slightly.
- Return the salmon to the skillet, spooning the creamy mixture over the fillets. Let it simmer for an additional 2 minutes to heat through. Garnish with fresh parsley and serve hot.

For a crispy salmon skin, ensure the pan is hot enough before adding the fish and avoid moving it too much. Fresh herbs and a squeeze of lemon can elevate the flavors.
