  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Season the salmon fillets with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add the salmon, skin side down, and sear for 4-5 minutes per side until golden and cooked through. Remove the salmon and set it aside.
  3. Reduce the heat to medium. Add butter to the skillet. Once melted, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add sliced mushrooms to the skillet. Cook for 4-5 minutes until they soften and release moisture.
  5. Stir in fresh spinach, cooking just until wilted—this should take about 2 minutes.
  6. Pour in the heavy cream, add grated Parmesan cheese, and stir in optional red pepper flakes. Allow the mixture to simmer for 3-4 minutes until it thickens slightly.
  7. Return the salmon to the skillet, spooning the creamy mixture over the fillets. Let it simmer for an additional 2 minutes to heat through. Garnish with fresh parsley and serve hot.

For a crispy salmon skin, ensure the pan is hot enough before adding the fish and avoid moving it too much. Fresh herbs and a squeeze of lemon can elevate the flavors.
