Ingredients
2 cups elbow macaroni pasta : A staple for any macaroni salad, the small pasta shape holds the dressing and flavors well.

1 cup corn kernels, cooked or canned – Adds sweetness and texture. Frozen corn works well too.

Instructions
1. Cook elbow macaroni according to package instructions. Drain and rinse under cold water to cool.
2. In a large mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, cumin, garlic powder, salt, and pepper.
3. Add the cooled macaroni to the bowl and toss to coat with the dressing.
4. Stir in the red and green bell peppers, red onion, corn, diced tomatoes, black olives, and fresh cilantro.
5. Mix well and refrigerate for at least 1 hour before serving to allow the flavors to meld.
6. Garnish with additional cilantro if desired.
