A comforting meatloaf infused with the savory flavors of French onion soup, slow-cooked to perfection in a crockpot.
Ingredients
- 2 pounds lean ground beef
- 2 large yellow onions, caramelized
- 1 cup breadcrumbs (plain or panko)
- 2 large eggs
- 1 cup shredded Swiss cheese
- Salt, to taste
- Pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
Instructions
- Caramelize the onions in olive oil over medium heat until golden brown, about 20-30 minutes. Set aside to cool slightly.
- In a large bowl, combine the ground beef, cooled onions, breadcrumbs, eggs, and seasonings. Mix gently until just combined.
- Shape the mixture into a loaf and place it in a greased crockpot.
- Cook on low for about 6 hours or on high for 3 hours.
- In the final 15 minutes of cooking, sprinkle the shredded Swiss cheese on top and allow to melt.
