Description
A comforting dish featuring creamy, flavorful chicken stuffed into pasta shells topped with Cajun seasoning.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup Cajun seasoning
- Salt and pepper to taste
- 12 large pasta shells
- 1 cup non-alcoholic chicken broth
- 1 tablespoon vegetable oil or butter
- 1/4 cup Cajun seasoning (for sauce)
- Fresh parsley for garnish
Instructions
- Cook the pasta shells in a large pot of salted boiling water until al dente. Drain and cool slightly.
- In a mixing bowl, combine shredded chicken, cream cheese, mozzarella, half of the Parmesan, Cajun seasoning, salt, and pepper; mix until creamy.
- Fill each pasta shell with the chicken mixture and arrange in a greased baking dish in a single layer.
- In a saucepan, melt butter or heat oil, then add remaining Cajun seasoning and chicken broth. Simmer for 2-3 minutes.
- Pour the sauce over the stuffed shells, sprinkle with remaining Parmesan, cover with foil, and bake at 375°F for 20 minutes. Remove foil and bake for another 10-15 minutes until bubbly.
- Let cool for 5 minutes, garnish with parsley, and serve warm.
Notes
Add garlic for extra flavor or swap proteins as desired. Can be prepared ahead of time and baked later.
