Description

A comforting dish featuring creamy, flavorful chicken stuffed into pasta shells topped with Cajun seasoning.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup Cajun seasoning
  • Salt and pepper to taste
  • 12 large pasta shells
  • 1 cup non-alcoholic chicken broth
  • 1 tablespoon vegetable oil or butter
  • 1/4 cup Cajun seasoning (for sauce)
  • Fresh parsley for garnish


Instructions

  1. Cook the pasta shells in a large pot of salted boiling water until al dente. Drain and cool slightly.
  2. In a mixing bowl, combine shredded chicken, cream cheese, mozzarella, half of the Parmesan, Cajun seasoning, salt, and pepper; mix until creamy.
  3. Fill each pasta shell with the chicken mixture and arrange in a greased baking dish in a single layer.
  4. In a saucepan, melt butter or heat oil, then add remaining Cajun seasoning and chicken broth. Simmer for 2-3 minutes.
  5. Pour the sauce over the stuffed shells, sprinkle with remaining Parmesan, cover with foil, and bake at 375°F for 20 minutes. Remove foil and bake for another 10-15 minutes until bubbly.
  6. Let cool for 5 minutes, garnish with parsley, and serve warm.

Notes

Add garlic for extra flavor or swap proteins as desired. Can be prepared ahead of time and baked later.
