Chicken Corn Soup, a comforting blend of chicken, corn, and seasonings, is perfect for a warm and hearty meal.
Ingredients
2 cups chicken breast, shredded
4 cups chicken broth
1 cup sweet corn kernels
1/2 cup creamed corn
1 egg, beaten
2 tbsp cornstarch, mixed with 1/4 cup water
1/2 tsp white pepper
1/2 tsp salt
1 tbsp soy sauce
1 tsp ginger, grated
2 green onions, chopped
1 tsp sesame oil
Instructions
1. In a pot, bring the chicken broth to a boil.
2. Add shredded chicken, corn kernels, creamed corn, ginger, salt, white pepper, and soy sauce. Simmer for 10 minutes.
3. Slowly stir in the cornstarch mixture to thicken the soup.
4. Gradually pour in the beaten egg while stirring to create egg ribbons.
5. Add sesame oil and green onions. Stir well.
6. Serve hot and enjoy!
Notes
- For extra flavor, add a dash of white vinegar and black pepper before serving.
- You can use canned or fresh corn.
- Adjust thickness by adding more or less cornstarch.
