Ingredients

  • 1 tbsp olive oil
  • 100 g chicken boneless (cut in small cubes)
  • 1 tbsp unsalted butter
  • 200 g white mushrooms (sliced)
  • 1 clove garlic (minced)
  • 2 tbsp onion (chopped)
  • 1/2 tsp crushed black pepper
  • 1 tsp Italian herbs
  • 1/2 tsp dried tarragon
  • Salt (to taste)
  • 1 tbsp all-purpose flour
  • 1/2 cup cooking cream
  • Puff pastry sheets
  • Egg wash (1 egg whisked with 2 tbsp milk)


Instructions

  1. Heat olive oil in a pan over medium heat. Cook the cubed chicken until fully cooked, about 5-7 minutes. Remove the chicken and set it aside.
  2. In the same pan, melt butter and sauté garlic and onion until they soften, around 2-3 minutes. Add the sliced mushrooms and cook until golden brown, about 5-6 minutes.
  3. Return the cooked chicken to the pan. Stir in flour, black pepper, Italian herbs, tarragon, and salt, mixing well.
  4. Gradually add cooking cream while stirring until the mixture thickens. Set the filling aside to cool.
  5. Cut rounds from the frozen puff pastry and place them on a baking tray.
  6. Use a smaller cutter to create rings for each base. Assemble by brushing the base rounds with egg wash, placing a ring on top, and pricking the base to prevent puffing.
  7. Chill the assembled pastries for at least 15 minutes to firm them up.
  8. Preheat the oven to 200°C (400°F), then bake for 15-20 minutes, or until golden brown.

Notes

For a creamier filling, consider adding mozzarella or cheddar cheese. Experiment with different herbs for enhanced flavor.
