Instructions
- In a bowl, mix together the cheese, jalapenos, ground beef (if using), black beans, green onions, and spices. Stir until well combined.
- Lay an egg roll wrapper on a flat surface. Place a spoonful of the filling in the center.
- Fold the wrapper over the filling, roll it tightly, and seal the edges with a bit of water to hold everything in place.
- Heat oil in a deep fryer or large pan over medium heat.
- Fry the egg rolls until they turn golden brown and crispy, about 3-4 minutes on each side.
- Remove the egg rolls from the oil and drain them on paper towels to remove excess oil.
- Serve hot, accompanied by sour cream, guacamole, and salsa for dipping.
